think about an equation there are 4 variables. X + Y + Z = S 1. server seed 2. server seed hashed 3. client seed 4. nonce 3 of them is know by the player after all the calculations done the game consequences is occur. after you play if you want to check that game, you can change your server seed. the unknown variable will be shown to you and you can verify the equation and you can understand the game is fair. If you think that they can change the unknown variable but you were wrong. when you play you know the 3 variable on that game so if they change it the equation will fail. that`s how the fairness works for both side.
